- 4-5 large fresh carrots
- 2 garlic
- 1/4 litre of yogurt
- Olive oil
- A lot of affection
- A frying pan
- A large bowl
- A peeler
- A grater
- A mortar
First peel the carrots and grate them on the same pan (Fig. 1), add a little oil and salt (Fig. 2). Leave on low heat so that the carrots cook little by little and soften, but do not burn (Fig. 3).
While we go to crush the garlic with a little salt in the mortar and then mix them with the yogurt and a little more salt. We reserve (Fig. 4).
When the carrot has finished cooking, let it warm for about 20/30 minutes (Fig. 5) and then mix it with the yogurt we had prepared before (Fig. 6).
Spread this mixture on a serving dish and sprinkle a little chopped parsley on top. Ready. It’s that easy.

We can serve it warm or cold, previously cooled in the refrigerator.
- It is a magnificent salad to accompany any dish or take alone.
- If you are vegan, don’t worry, you can make the recipe with soy yogurt and it looks perfect.
